Cranberry Cheesecake
Ingredients:
- 225 grams digestive biscuits (low fat) crushed
- 75 grams melted butter
- 350 grams fresh or frozen cranberries
- 225 grams sugar
- 1 teaspoon grated orange rind
- 225 ml cream
- 225 grams cream cheese (low fat Philadelphia)
- 50 grams sugar
- half a teaspoon of Vanilla essence
- 1 sachet of gelatin (11.6 grams)
Preparation:
- Combine the biscuit crumbs and melted butter and press into an eight
inch round dish
- Leave this dish in the fridge to chill
- Cook cranberries and 225 grams of sugar over a medium heat, stirring
until sugar dissolves and the berries release their juice - (usually
10 - 15 minutes)
- Add the orange rind and allow to cool completely
- Whip the cream until stiff
- Stir in 50 grams of sugar and vanilla (to the cream)
- Combine all this (cream, sugar and vanilla) with the softened low
fat cream cheese
- Fold in cooled cranberry mixture
- Add the single sachet of gelatin (dissolved as per instructions)
- Mix it all with a wire whisk
- Turn the mixture into the prepared crumb lined dish
- Leave in fridge for a few hours
This is absolutely delicious so it's wise not to make it more than once
a month unless you are looking to gain weight!
