Sumo Fish Stew
Chanko nabe is a stew-like medley of vegetables and seafood
cooked in one huge pot. It is the principal source of
energy for Sumo wrestlers. The base in which the food is cooked varies
from stable to stable; it is flavored with soy sauce,
miso, and/or sake lees. As the sumotori would get tired of eating the
same one pot meal everyday, the ingredients vary
considerably. There is therefore some confusion as to what exactly
characterizes a dish as chanko nabe. It is the act of being
prepared and eaten in a sumo-beya more than anything else that defines
chanko nabe. Legend has it that the term "chanko"
came into use in the Edo Period. A Sumo wrestler touring in Nagasaki
discovered the one pot dish there, and by approximating
the pronunciation of its Chinese name ended up with the name "chanko."
One recipe I found:
1 head of cabbage
1/4 lb. spinach
4 carrots
1/2 lb. bamboo shoots
4 leeks
12 oz. tofu, cubed
12 shitake mushrooms
6 cups fish stock
1 nongreasy fish, cleaned and cubed
Bring the broth to a boil, add the veggies, let simmer until they are done, add the fish and simmer
until it is done. Eat a LOT of it.)
